The Chateau de Gilly, the historical residence of the Abbis de Cateaux, is located near Clos Vougeot. It has lost none of its authenticity, with its moats, its French-style gardens and magnificent vaulted Dining Room.
History
In the 6th century, Germain, Bishop of Paris, was the owner of the estate of Gilly. In his honour, the Benedictine monks built a priory. In the Middle Ages, the monks of Cateaux came to live there and fortified the Priory of Gilly. This precaution did not prevent several attacks and its destruction during the Hundred Years' War.
In the 16th century, Nicolas Boucherat II, 51st Abbot of Cateaux, decided to rebuild the Chateau de Gilly and make it into a residential dwelling, which it remained up to 1789. However, the French Revolution upset this situation and on 14th May 1790, the properties of the Cistercian monks were declared a national asset.
The Chateau de Gilly was sold to the Cote d'Or Department, it was restored and inaugurated as the Chateau-theatre of Gilly-des-Cateaux on 12th January 1978. This experiment lasted until 1985.
Following considerable building work, the gates of the Chateau Hotel de Gilly opened to the public in September 1988.

The Château de Gilly has 48 rooms of 6 different categories, from the most elegant apartment to the most delightful room including a duplex suite, junior suite, "Deluxe", "Superior" and "Traditional" rooms, located in the Château or in one of the two adjoining lodges from the same era: the Pavillon du Pere Abbé or the Pavillon des Jours. All the rooms are elegantly decorated in keeping with their location and enjoy modern comforts. They offer pleasant views over the French garden, the village or the Vouge River.
Standard Room:
All located in the wing of the Château built in the 17th century overlooking the garden, these rooms are comfortable and can accommodate one or two people. They have a queen-sized bed and bathroom with bath and separate toilet. Wi-Fi access, mini-bar, hair-dryer, flat screen television.
Traditional Room:
These rooms are more spacious and all offer a pleasant view of the French style garden. They are equipped with a queen-sized bed or twin beds and have a bathroom with bath and separate toilet. Wi-Fi access, mini-bar, hair-dryer, flat screen television.
Superior Room:
Spacious and comfortable, the majority overlook the French style garden or the village. Some of them, located in the delightful Pavillon des Jours, have a view over the park and moat. Equipped with a queen-sized bed or twin beds, they have a bathroom with bath and separate toilet.
Deluxe Room:
Very spacious and comfortable, elegantly decorated respecting the authenticity of the location, here you will discover a beautiful exposed beam or old red floor tiles. They also offer a wonderful view over the French style garden or the village. They have a bathroom with bath and separate toilet.
Junior Suite:
The junior suites consist of a very spacious and comfortable room with queen-sized or twin beds, and a lounge with sofa, armchairs and coffee table. The decor respects and emphasises the character of each room in this former residence of the Father Abbots from the Cîteaux Abbey, superb wood panelling in one, Burgundy stone fireplace in the other, exquisite wall coverings. Hi-fi system, Wi-Fi access, mini-bar, flat screen television.

Chef, Christophe Barnouin, born in the Gard region in 1964, took his first steps as a Chef in this region. In 1981, he started work at the Auberge de St Maximin Gard. He joined Les Grandes Etapes Francaises at Le Choiseul in Amboise, in 1986 where, with the support of the Chef, Louis Schwendenmann, he developed his taste and talent for designing and making sculptures in lard and ice. In 1988, he became part of the team of 3 Chefs when the Chateau de Gilly was opened. After graduating from the posts of Assistant to Assistant Head Chef, Christophe Barnouin is now the Chef with a brigade of 16 people.
